PhD Physics and Physical Chemistry of Foods
Written by Suleman Shahid
Sunday, 24 September 2006
Job description
The Food Physics group (FPH) and Food Process
Engineering group (PRE) of Wageningen University will start a joint
project in 2006 on the manufacture of micron-sized encapsulation
systems for food and pharmaceutical applications.
The aim of this project is to develop new micron-sized colloidosomes
and polymersomes, for encapsulation purposes in functional foods and
pharmaceutical applications. For their production, self-assembling
proteins, biopolymers, and colloidal particles (with varying size and
morphology) will be used. The effect of the interfacial properties
(e.g. interfacial tension and interfacial rheology) on the complex
mechanical and release properties of these new capsules will be
investigated. In collaboration with a second graduate student, new
processing devices based on micro technology will be designed, to
produce these capsules.
Requirements
University Graduate Candidates should
hold a MSc degree in either physics, physical chemistry, food
engineering, or chemical engineering, and have good writing and
communication skills. Candidates with prior experience in
characterization of interfaces, biopolymers, or encapsulation
technology are preferred.
Organization
Wageningen University and Researchcentre Food Physics Group
